Whether you are a foodie or not, what we are about to present is one of those events not to be missed because it combines history, culture, taste, and knowledge.
On February 25, 2026, from 12:30 PM to 2:15 PM, in the Gusto area of BTM Italia, a sensory journey through the alpine excellences of Piedmont will take place with “The Taste Destinations”, a moment dedicated to the authentic flavors of Canavese and Valsesia.
An event that, as we announced, is not just a tasting, but a narrative, territory, and identity. Through a live showcooking, the audience will be guided to discover the raw materials that are born and grow at high altitude: wild herbs, butter and alpine cheeses, artisanal cured meats, and wines that tell the story of these valleys.
The experience will begin with a welcome featuring typical cured meats and cheeses, enhanced by the bubbles of Erbaluce di Caluso, a symbol grape of Canavese, capable of expressing freshness, minerality, and character.
Next, the heart of the showcooking: a risotto creamed with mountain herbs, cheeses, and butter from the alpine pastures, finished with classic Erbaluce di Caluso. A dish that encapsulates the aromas of alpine meadows and the wisdom of a cuisine that enhances simple yet extraordinary ingredients.
The journey will conclude with a pairing of a red Coste della Sesia, elegant and structured, perfect for accompanying the intense flavors of the mountains. A combination that promises balance, depth, and – as the organizers hint – “a high-altitude poetry”.
Leading the narrative will be Silvio Bertero, President of Turismo in Canavese, and Alice Filisetti, Chef and Vice President Valsesia Monterosa who will guide the audience through a journey of taste but also territorial enhancement. Because every ingredient speaks of pastures, seasons, work, and community.
“The Taste Destinations” thus confirms itself as an opportunity to discover – or rediscover – two territories that make quality, sustainability, and authenticity their strengths.
President Bertero, what does it mean for you to bring the flavors of Canavese and Valsesia here to Bari, and how do you think they can interact with the Apulian gastronomic tradition?
We believe that every place in our beautiful Italy can tell its Territory through its original flavors, and it is precisely here that the dialogue opens in the uniqueness of local productions.
Are there connections or inspirations between the mountains of the North and the Apulian traditions that you will try to convey through the dishes of this showcooking?
The showcooking we are going to present enhances the raw materials from small producers and local farmers who respect and represent an authentic supply chain that cannot be replicated; we have chosen cured meats and cheeses, butter, herbs and rice, high-quality white and red wines from our Territories that are difficult to compare to the flavors of Puglia except for their authenticity.
What do you hope the participants of BTM Italia will take home after this moment, beyond the taste of the dishes?
We hope that visitors and tourism operators will take home the true essence of the flavors we will propose from a cuisine and genuine productions of our Lands
